Late Summer Wood Fired Pizza
INGREDIENTS
1 Lola Dough Ball

4 ounce tomato sauce

1 pint local (Alewife Farm) cherry tomatoes, halved lengthwise
1 ball high quality burrata
Fresh Basil for garnish
Sea Salt and Olive Oil for garnish
Dough
150 grams Caputo 00 flour
150 grams King Arthur Sir Gallahad Flour
10 grams kosher salt
165 gram room temperature water
12 grams olive oil
18 grams fresh yeast
Tomato Sauce
1 #10 can Bianco DiNapoli Tomato, or other high quality organic peeled tomato.
Season with sea salt and olive oil to taste. Blend the tomatoes with an immersion blender and wisk in the oil and salt.
DIRECTIONS
Using a stand mixer fitted with the dough hook attachment, mix the two flours and salt together on medium speed for 2 minutes, just long enough to combine the dry ingredients. In a separate bowl, whisk together the water, olive oil and yeast, until the yeast has fully dissolved. Add the liquid to the dry ingredients and mix on slow speed for 3 minutes. Let the dough rest for 15 minutes, undisturbed and then increase the speed to medium and allow to mix for 5 more minutes. Scrape the dough into a clean mixing bowl, that will have enough room for the dough ball to double in size when covered. Cover the with plastic wrap and let it rest in the refrigerator for 12 hours. Once rested, turn the dough out onto a lightly floured work surface and portion into 240 gram balls. Let the dough balls rest at room temperature for about a half hour before making the pizza!
Ladle four ounces of tomato sauce on the pizza and spread in a circular motion, being careful to keep the sauce within the crust. Assemble the cherry tomatoes skin side down all over the pizza and drizzle some olive oil before tossing the pie in the wood oven. Once the pizza is cooked, tear the fresh burrata to garnish on the pizza and finish with the basil, sea salt and olive oil.
