Bertil dries the beans with an especially quick method-on concrete beds under the Madagascar sun-that retains acidity and result in a strong, fruity punch. The exact fruit flavor of the beans Dandelion buys from Bertil can vary from season to season, harvest to harvest, even roast to roast. For this 2019 harvest, the roast is low and slow, bringing out sweet dairy notes to complement the beans' bright fruitiness.
